William Elliott is the Executive Bar Director/Managing Partner of critically
acclaimed Maison Premiere, and developed the bar programing for Sauvage of
Brooklyn, The Golden Hour at The High Line Hotel in Chelsea, as well as
Seabird in London. William has been an integral part of Maison Premiere since
before its opening in 2011 and was leading the bar as it received such accolades as
the 2016 James Beard Award for Outstanding Bar Program, Bar of the Year
2016 by Time Out New York, and top rankings in the World's 50 Best Bars list for
two consecutive years. In 2023, it was re-listed as #39 on North America’s 50 Best
Bars, and the only bar in Brooklyn to be listed.
2016 also saw the opening of the team's new restaurant, Sauvage, where William
curated a back bar featuring over 200 rare and small-batch bottles from artisan
producers worldwide, with an emphasis on herbal liqueurs, eau de vie, and navyproof
gins. His cocktail menu, referred to as "exemplary" by The New York
Times, offers aperitif-style signatures, updated classics featuring unexpected
ingredients, and complex non-alcoholic cocktails. He has been profiled and
mentioned by scores of publications, including The Wall Street Journal, Forbes,
Gear Patrol, Vanity Fair, The New York Times, and Punch, and his cocktails are
prominently featured in many of the best beverage books of the past ten years.
He now resides in Brooklyn and works on creative development for various bar,
restaurant, and hotel concepts around the world.
He is also a co-author of the recently released Maison Premier Almanac.
