TJ’s hospitality career has spanned well over two decades and led him everywhere from Baltimore to New York, Miami to Brazil, India to the Bahamas. His experience encompasses everything from fine dining to nightclubs and bars to opening, as executive chef and co-owner, Baltimore’s highly regarded Red Maple restaurant. Having managed at many of New York’s landmark restaurants including the Spotted Pig and Mas, All that led him to open Mother’s Ruin, a bustling casual cocktail venue in Manhattan’s NOLITA area, 12 years ago. Mother’s Ruin has grown to open in Nashville and Chicago with TJ opening a beach version in Charleston named Lowlife Bar. He has recently teamed up with Thomas Wilson and Chef Josh Taylor to open the restaurant Lost Isle in John’s Island.
As a well-respected member of the cocktail community, TJ has competed in and won numerous competitions and is frequently asked to guest judge events and to speak on panels. Using his experience, he has engaged in numerous successful consulting projects all over the world. TJ’s inexhaustible contacts within the cocktail community, the liquor industry and hospitality are some of the most important and unique elements of the success of Mother’s Ruin. With more than 30 years in the hospitality industry, his passion for food, beverages and service has landed his creations Cosmopolitan, Black Book, Imbibe, and Tasting Table – to name a few, as well as several appearances on The Cooking Channel and The Food Network.
