Unlike many chefs that credit their mothers or grandmothers as the impetus for their culinary careers, Chef Steven Manall, credits the men in his family. Particularly his grandfather who served in the army – and according to Steven “made the best corned beef hash, I ever tasted.”

It was this early introduction to food that was hearty and rich in flavor that formed his approach to cuisine. “Haute cuisine may be tasty, but it’s a little too frou-frou for me,” explains Steven. “The biggest compliment to me is when a guest is served one of my dishes and they exclaim they’ll never finish it, but practically lick the plate clean.”

As the chef of the only four-star breakfast and lunch only restaurant in the state of South Carolina Steven never relies simply on portion size to satisfy his guests –– instead he uses classic dishes as inspiration and adds unique flavors, preparations and presentations.

Considered the power lunch place to be seen in Charleston’s historic district, favorite dishes of the see and been seen set include his Surf and Turf Burger made with a 13 ounce burger of chuck, dry aged beef sirloin and prime boneless short rib topped with two ounces of lobster and a béarnaise sauce, or his Crab Salad with five ounces of lump crab meat, or what is lauded by locals as the best She Crab Soup in the Lowcountry. Breakfast guests can even delight in a version of Steven’s grandfather’s famed corned beef hash.

Born and raised in New Jersey – Manall graduated from Atlantic Cape Community College with a degree in Applied Science and a focus on culinary arts and nutrition. Steven has worked in numerous kitchens, in positions ranging from saucier to sous chef, including the Inn at Perry Cabin (Maryland’s Eastern shore), and the Windsor Court (New Orleans), prior to taking the helm at the Palmetto Cafe in spring of 2013.

Drawing inspiration from Charleston’s famed courtyard gardens, the Palmetto Cafe’s decor is a juxtaposition of outside and in, new and traditional, and most importantly – Charleston. Set amidst a central garden and fountain, the Four-Diamond Palmetto Cafe is open for breakfast daily from 6:30am to 10:30am and lunch daily from 11:30am to 3:00pm. The menu features dishes inspired by the bounty of the area’s oceans, fields and ranges, but with an international twist. Complimentary parking is available for guests of the restaurant.
