Born and raised in Boston, MA, Sebastian Sprouse has been reinventing and elevating many of the traditional Low country dishes. Flavor profiling, simplicity, and core French techniques are three principles Chef Sebastian incorporates into creating sophisticated Low country cuisine.

Chef Sebastian took over the culinary leadership role at Eliza's Bar and Kitchen in Hotel Indigo just a few months ago. Prior to his role at the Indigo, he ran the kitchen at Deer Valley Trails, a restaurant owned by the owners of the Buffalo Bills, in upstate New York. Sebastian spent quite some time developing and honing his culinary skills from the French Trained Chef, Sebastien Roelly at the 4-star Forbes luxury resort, The Whiteface Lodge.
