Noah is a writer and former lawyer who fell in love with agave spirits after opening his first Mexican restaurant, El Atoradero, in Prospect Heights, Brooklyn in 2015. He followed that with Madre Mezcaleria. Noah next joined the team at Michelin-starred Oaxacan restaurant Claro as the General Manager before moving to Las Vegas to shephard the agave spirits program at Elio alongside Chefs Enrique Olvera and Dani Soto-Innes. Elio was followed by Casa Playa, where Noah built the most forward-thinking agave list in Las Vegas. In 2023, Noah returned to New York City to helm The Cabinet Mezcal Bar which stocks quite possibly the largest mezcal selection in the world.
