Nicholas Dowling brings over 20+ years of restaurant experience to the table. A graduate of Johnson & Wales University, he has worked among some of the best chefs in America. His experience is diverse, having worked every position from dishwasher to line cook all the way to Front of House manager and even expanding out to a producer role as Head Distiller for one of America’s top young craft distilleries.
Before opening Daps Breakfast & Imbibe with his best friend/business partner Jeremiah Schenzel in March of 2018, Nick worked as the Distiller for 4 years at High Wire Distilling. Before that he was at The Macintosh, where he and Jeremiah first met, working for James Beard Nominated chef Jeremiah Bacon. Before arriving in Charleston, Nicholas helped run minibar by Jose Andres and was a part of the team when chef Jose Andres won James Beard’s Outstanding Chef 2011. He also managed Cafe Atlantico & open and closed a year long pop-up coinciding with the National Archives, America Eats, in Washington, D.C.-also for Jose Andres. Coming in 2023, He and Jeremiah will be opening Cleats. A sandwich restaurant with a sports obsession.
