Juan Cassalett is the Executive Chef/co-owner of Malagón Mercado y Tapería. His family is originally from Spain; however, he grew up in Colombia and Tennessee before moving to Charleston and making this city his home. He is married to Jill Mathias, executive chef/co-owner, of Chez Nous, where he was the Sous Chef for the 5 years prior to the opening of Malagón.
