Jordan Herndon is chef and owner at Palm&Pine, a New Orleans restaurant featuring the cuisines and culinary traditions of “the South and south of that” (Louisiana, the southern states, the Caribbean, Mexico, and Central America). In this role, Jordan works alongside his wife, Chef Amarys Koenig Herndon, to lead the kitchen and develop the seasonally evolving menu for this unique dining concept.

Originally from Texas, with time spent in Longview, Pine, and North Houston, Jordan attended Texas State University where he worked in restaurants throughout college. After that, Jordan decided to continue pursuing his career in food and beverage and attended Delgado Culinary School in New Orleans, obtaining his Associates Degree in culinary arts. Jordan has worked in several premier New Orleans restaurants including Arnaud’s, Ralph’s on the Park, and Mopho, before starting a pop-up concept called The Old Portage. Now, Jordan heads the kitchen at Palm&Pine, opened in 2019, with his partner Amarys.

Outside the restaurant, Jordan enjoys hanging out with his wife Amarys and dog Jr., reading his favorite cookbooks and listening to Houston rap.
