Regularly ranked among the world's best bartenders and cocktail creators, Jillian is known for her drink menus and obsessive attention to detail. Her experience, comprehensive knowledge – particularly of whiskey – and outstanding technical and communication skills mean that Jillian is in demand for workshops worldwide. She was on the opening team of Maison Premiere and the bar manager at Death and Company both in New York City before taking on the role of beverage director in Dead Rabbit, a position she held for seven years. She has co-authored three books on cocktails and Irish whiskey, including Paddy Drinks: Modern Irish Whiskey Cocktails and Mixology & Mayhem.
