Originally from Greensboro, North Carolina Chef/Owner George Kovach of Bearcat left his home state in 2013 with plans of returning, but with a new understanding of techniques and flavors to bring back to the Low Country. Kovach has spent time in a number of exceptional restaurants such as, CRAFT NYC until 2015 and made a career changing move to Chicago where he worked in the top Michelin star restaurants as the Executive Pastry chef- Acadia-Two Michelin stars, Band of Bohemia-One Michelin star, EVER-Two Michelin stars and Elizabeth- One Michelin star. While at Band of Bohemia Kovach reached a new level of creativity and was critically acclaimed for his innovative pastries.
EATER young gun nomination 2017, semi-finalist spot with ZAGAT’s first ever national 30 under 30 list the same year. Kovach’s work has also been featured in food and wine magazine, USA Today and various other publications. Kovach has since returned to the Carolinas and is looking forward to calling Charleston, SC home and bringing a new experience and passion for the guest, as well as his staff.
