Born in the small mountain town of Spruce Pine, NC. Chef Eric Burleson was brought up with all the old Appalachian traditions from preserving everything to being taught to use the entire product. Being brought up to know where your food comes from was instilled in him before he knew his path as a Chef. Eric is a self taught Chef who has been working his way through kitchens for the last 15 years cooking multiple different cuisines throughout North Carolina. Learning along the way from very notable chefs. With his nose to the grindstone and continuous pursuit of knowledge he is constantly pushing himself and the boundaries of what can be done. At the helm of the Over Easy Cafe his constant commitment to working with local farmers, foragers and purveyors continues to shape his style of cooking with a very hyper seasonal approach to modern Appalachian cuisine.
