Known to most as “Clammer Dave”, producer of farm raised clams and the incomparable “Capers Blades” oysters, was schooled in agriculture and has a long and diverse career in farming, livestock production and natural resource management. Twenty-four years ago he began raising clams and later diversified into oysters, replicating the harvest and processing methods dating back to the days of African enslavement.
With thirty acres of sub-tidal, salt marsh bottom lands behind a barrier island north of Charleston and a network of cooperating clam farmers and oyster harvesters with a processing facility in McClellanville, SC, CD produces the uniquely grit free, pressure washed, hand graded and packed clams and oysters for the finest restaurants in Charleston and renowned restaurants around the country. He also ships to individuals who fall in love with his products during their restaurant experiences.
The “Clammer Dave” brand enjoys wide east coast recognition. He has been featured in numerous newspaper, magazine and internet articles. Southern Living, Charleston Magazine, Garden and Gun, The Local Palate and even a mention in Vogue along with participation in documentaries, travel and Public Television shows. The Capers Blades oysters have been named among the top ten southern farm raised oysters by Southern Living and among the top fifteen in North America by the popular lifestyle website Thrillist.
In June of 2023, Dave entered into partnership with Barrier Island’s, Josh Eboch and Kendra Tidwell who have assumed all operational control. Dave and his partner Laura, now happily reside high up on a farm in the Appalachian mountains near Tazewell, VA on the WV border. It’s cows, alpacas and dogs. Also, a newly constructed Yurt, a guest house on the mountain side overlooking the valley.
