From Emeril Lagasse’s NOLA Restaurant in New Orleans to Enoteca Vin with Chef Ashley Christensen in Raleigh, Speaks sharpened her skills in the front and back of the house before launching her own catering company in 2007, PoshNosh Catering. After a successful decade catering to Raleigh’s adventurous food connoisseurs, Speaks vision for a large-scale, edgy, urban event space came to life at Whitaker & Atlantic, followed by Hummingbird, an intimate all-day cocktail bar which offered a return to her restaurant roots.
