Georgie’s Executive Chef, RJ Yoakum, joined the Georgie team in January 2023 following three and a half years at The French Laundry in Napa where each year he helped retain the restaurant’s 3 Michelin stars working in all aspects of the kitchen, as well as, developing daily changing menus for the famed Thomas Keller Restaurant.
Prior to RJ’s tenure at The French Laundry, he helped open Angler in San Francisco where in less than 3 months the restaurant earned a Michelin star.
Chef RJ is a Southern California native, who studied at The Culinary Institute of America at Hyde Park. While studying at CIA, Chef RJ traveled throughout Europe and southeast Asia to learn all he could about each regions’ cuisine, as well as their rich tradition in agriculture and gastronomy.
RJ’s travels culminated in an extensive stage at The Clove Club in London, known for its famous tasting menu rooted in impeccably sourced seasonal British produce.
Before moving to Texas, RJ had never lived or been to Texas. The biggest take away from working with Chef Thomas Keller and Chef David Breeden at The French Laundry was to let the farmers tell you what to put on the menu and forge a strong relationship with them. They are the true masters.
Chef RJ has worked relentlessly to establish great relationships with local Texas farmers and ranchers such as profound Farms, Reeves Farm and Rosewood Ranch.
At Georgie, Chef RJ’s singular focus is to craft a simple, delicious, and nuanced menu that allows the ingredients to shine.
