From Guatemala to the United States. With big dreams, our new Culinary Director Chef Ruddy Bollat came to the United States and started in the restaurant industry over 12 years ago. His first introduction to a kitchen was as a dishwasher, his attention to detail and his work ethic took the industry by storm leading him to becoming a line cook, sous chef, then executive chef – and now, Culinary Director.
Chef Ruddy had the opportunity to elevate his cooking skills working side by side with great chefs and managers. He helped to open new restaurants with Mex1 Coastal Cantina, Islander 71, Barcelona Wine Bar, Bartaco, Dinosaur BBQ, Hudson Grill and Boca Restaurant Group. He also owned his own food truck business, BombarBQ, which led him to where he is today. Having won Best Food Truck by The Best of Gold Coast 2 years in a row in the Connecticut area solidified that his passion and work ethic is tangible through his recipes and leadership.
