From riding waves as a surf coach in South Africa to treading the boards as an actor in New York, Ronan Collins’ life is a roller coaster. He honed his bartending skills at world-class venues like Dandelyan and Trailer Happiness in London and even guest bartending at the 10 Downing Street.

Based in Belfast, Ronan splits his time with many venues, he is a tutor at Ulster University on International Hospitality Management, when the mood strikes, he opens Café Disco, a pop-up cocktail bar and he channels all of his passion and expertise into a thriving drinks consultancy (It’s Ronan LTD) and serves as co-founder of Redacted Independent Bottlers, pushing the boundaries of Irish whiskey.

Finally under the moniker Whiskey4Breakfast.com, Ronan brings his love of world-class cocktails, Irish whiskey and Irish travel to the forefront, connecting with enthusiasts through authentic storytelling and engaging content.

In his personal time when he’s not running marathons “for the craic” or tackling IronMan races to stay busy, you’ll find him walking his golden retriever, Finn in the Irish countryside with his fiancée Frankie.

Ronan will soon be trading his Belfast roots for the charm of Charleston, SC, joining the opening team of Hazel and Apple in 2025—a new chapter full of exciting opportunities.
