Chef Raul Sanchez draws his culinary inspiration from the rich culture and cuisine of Michoacán Mexico. He developed a love of cooking while watching his mother and grandmother prepare traditional Mexican food when he was growing up in Chicago. After working in the diverse culinary culture of the Chicago food scene, in 2011 Raul moved to Charleston to bring his authentic traditional Mexican cuisine to the Charleston area. He currently owns Maya del Sol Kitchen in North Charleston, the home of his Chef’s Table, a communal multi-course experience. The five-course traditional Mexican menu, created by Chef Raul, features fresh, authentic dishes, and changes regularly to reflect seasonal ingredients, with the occasional International food night thrown in to add spice to the mix.
