Before founding Lowcountry Oyster Co. with his business partner Trey McMillan, Malcolm’s love for food took him all around the world seeking out the best local dishes from Spain to Vietnam. While taking a break from traveling, Trey approached him with the idea to get back to their fishing and crabbing roots and start farming oysters. The rest, as they say, is history. The two now hand-raise the best effin’ oysters in the world down in the ACE Basin. To grow their “Lowcountry Cups” they use a sustainable, floating-cage oyster farming system to raise the oysters from 4mm seed to 3-inch single, select oysters. You can find them on raw bars throughout the Lowcountry all year long thanks to new regulations in South Carolina allowing for Summer oyster sales.
