They call her a “unicorn of barbecue”, Laura Loomis, the pitmaster at Two Bros BBQ Market in San Antonio. That’s because she’s one of very few female pitmasters that have successfully risen to the top of the Texas barbecue scene, named Texas Monthly Top 50 BBQ Joints in 2013. A full-blooded Texan and proud Air Force brat, moved frequently, but found a home in San Antonio the past fifteen years.  She joined the Two Bros team as a cashier, learning the pits on her days off, then took over the pits shortly after. Laura endears, “Barbecue found me. I wasn’t looking to even become a pit hand. It just happened. I fell in love with it.” Her talent and hard work was recognized in 2017 with Eater National “Young Gun” Award. The secret to her success is embracing the smoke, fostering a great team and her secret ingredient patience. That patience is a something that she’s applied in her life, as well. Just, sit back and let it do its thing is her best advice.
