John Bates is the Chef and fire tender at InterStellar BBQ, recognized as the #2 BBQ joint in Texas by Texas Monthly in 2021 and awarded a Michelin star in 2024. With over 30 years of experience as a cook and hospitality professional, John has founded several acclaimed concepts, including InterStellar BBQ, Yellow Bell Tacos, Deft Pies, The Noble Pig, and Noble Catering.

Throughout his career, John has been dedicated to delivering meaningful food experiences, exceptional hospitality, and innovative restaurant concepts. He is also deeply committed to creating a positive and supportive workplace environment for his team, recognizing that happy staff are integral to success. Recently, John has developed a keen interest in studying the rich history of barbecue, further deepening his connection to the craft. His culinary bucket list includes winning the Terlingua International Chili Championship and savoring a beer at Oktoberfest.

A proud native Texan, John has a deep passion for BBQ, craft beer, bourbon, tacos, and outdoor adventures like hiking, camping, and fishing.
