A proud native of South Carolina, Chef James London is pleased to return to his home state for his first independent venture, Chubby Fish. A graduate of the College of Charleston with a BBA in Hospitality Management, James also attended the French Culinary Institute. James' culinary travels took him across the country from Executive Chef of Niko Restaurant and The Hotel on Rivington in New York to The Elite Cafe in San Francisco. In early 2017, James and childhood friend and restaurateur Geoff Shyatt decided to return to South Carolina to open their own venture. Chubby Fish is a fast-casual seafood concept featuring fresh Low-country catches, which opened in Charleston's Elliotborough neighborhood in June 2018.
