Chef Darren Smith, owner and executive chef of Rivertown Bistro and Bonfire in Conway, SC, brings over three decades of culinary expertise and innovation to the table. At the age of 24, Darren opened his first restaurant, embarking on a journey that has solidified his reputation as a chef who lets food shine while celebrating its vast versatility and seasonality.
Darren’s culinary path began unexpectedly. Initially attending university to study business and play soccer, he found inspiration in his brother Scott, whose passion for the culinary arts introduced Darren to the creative possibilities of the kitchen. After two years at Winthrop University, Darren moved to Mount Pleasant, SC, where he immersed himself in the restaurant scene, gaining hands-on experience at notable establishments in the Charleston area. Among these, the former Locklear’s Lowcountry Grill proved pivotal, teaching him the importance of fresh, seasonal ingredients and foundational techniques like crafting beurre blanc and béarnaise sauces.
Today, Darren and his family are integral to Conway’s vibrant culinary landscape. Rivertown Bistro offers an elevated dining experience with dishes that highlight Lowcountry flavors through a modern lens, while Bonfire delivers a bold take on barbecue, infusing Southern tradition with global influences. Both restaurants reflect Darren’s commitment to honest food, fair pricing, and creating welcoming atmospheres where guests feel at home.
