Executive Chef Arian Blackwell leads the culinary program at Charleston’s O-Ku, bringing a unique blend of passion, precision, and artistry to his culinary creations. Born in San Diego, California, Blackwell’s journey to executive chef is rooted in a deep love for food and a desire to connect with others through his craft.
Blackwell’s culinary exploration began unconventionally. Raised a vegan, his first taste of meat ignited a curiosity that led him to start cooking his own meals. By age 15, he was working in kitchens in the Washington, D.C. area. This hands-on experience ignited a fire that led him to dedicate himself to the culinary arts.
Blackwell began his career with The Indigo Road Hospitality as a line cook at O-Ku in Washington, DC, where he quickly grew into the executive chef role. Looking for a new adventure, he joined the O-Ku Charleston team in January 2025.
When it comes to cooking, Blackwell believes that simplicity is key, and that overcomplicating dishes often leaves more room for error. This translates into his menus, where he prioritizes the integrity of ingredients and allows their natural flavors to shine. His unique approach involves a deconstruction process, where he takes classic dishes and, using seasonal ingredients, reimagines them through the lens of Japanese culinary traditions and techniques. This results in bold yet approachable dishes that showcase both innovation and respect for tradition.
Outside of the kitchen, Blackwell enjoys rock climbing, painting, and spending time with his cat, Peanut Butter.
