Alfonso and Rachel met and married in Seville, Spain. Alfonso cooked in a popular Argentinian restaurant and Rachel worked as an English teacher in Seville before moving back to Rachel's college town, Charleston. Since moving back Alfonso has worked at several stand-out Charleston restaurants, and in 2016 he started The Castejóns, a Spanish-food pop-up, with his wife. Lovers of the Lowcountry, Alfonso and Rachel include lots of local ingredients in their offerings and often meld together his Spanish heritage with her Southern-American background. Stand out dishes include: pulpo con papas, grilled artichokes with romesco sauce, chicken-liver pâté with homemade country bread, a variety of croquetas, and a delicious fried codfish sandwich.
