Palmira Barbecue + Friends
The accolades keep piling up for pimaster Hector Garate, owner of Palmira Barbecue, and for good reason. Known for their sustainable farm-to-table barbecue with old school wood fire techniques learned from whole animal cookery in Puerto Rico, Palmira has recently been dubbed as the #1 barbecue joint in America by Texas Monthly.
And he keeps good company too. Joining him at Palmira for an all-star pitmaster line-up, John Bates of Interstellar BBQ, Don Nguyen of Khói Barbecue, and Ruben Santana of Bark Barbecue, you can expect an innovative fusion that seamlessly blends the vibrant flavors of Puerto Rican, Vietnamese, and Dominican cuisines, while incorporating the time-honored cooking techniques of Texas and the Carolinas barbecue.
