Deep in the maritime forests near the Edisto River in Dorchester, SC, Marvin Ross runs Peculiar Pig Farm. While his style is considered “regenerative,” by some, to Marvin, it’s simply what he was taught: raising + rotating hogs on wooded lots where they graze + forage, and supplementing what they find with heritage grains. Guests spent a day on the farm with the Ross family, exploring the process of cooking whole hog barbecue + sustainable pig farming before sitting down to a communal meal.
