2022 Culinary and Beverage Forms

We are so excited to have you participate in the 2022 Charleston Wine + Food Festival! Product needed for your events during Charleston Wine + Food will be procured by our Culinary Logistics and/or Beverage Logistics team based on completed and approved Culinary + Beverage forms. Charleston Wine + Food will not reimburse for food cost or shipping of prepared food / beverage unless pre-approved. Forms must be submitted by the communicated deadline to ensure that product can be procured in time for the festival.

As we all know, supply chain issues are very real, so please be mindful of the form deadlines. We want to best ensure you are set up for success during the festival and these deadlines are vital to doing so.

 

EVENT SIGNAGE

We are updating our event signage for our Signature Events and The Lawn @ Culinary Village in 2022! Your event signage will include your name, restaurant, city and state, and a QR code. Guests will be able to scan the QR code to pull up your menu item. This will allow us to ensure that your menu is presented in the most accurate fashion.

 

WHAT CHSWF PROVIDES ON-SITE AT YOUR EVENT

– Linens

– Power drop (if needed)

– Tent

– Fire extinguisher

– Signage

– Disposables (if applicable)

– Adequate lighting

– Beverage logistics support (if applicable; ice, coolers, wine keys, serving, and prep tables)

– Culinary logistics support (if applicable; napkins, utensils, serving, and prep tables)

– Visiting chefs, since you are away from your home kitchen, the festival has a limited amount of  equipment for on-site needs

 

WORKING CREDENTIALS

In order to ensure that you have enough support to be successful at your event(s), we will be distributing wristbands that will serve as working credentials for your team members supporting you at your scheduled event(s).

 

A working wristband is not a ticket to participate + imbibe in a paid guest capacity. This is a safety issue and something we have put in place in order to ensure that our guests have a great experience. Your Talent Badge serves as the badge holder’s entrance to scheduled festival events and MUST be visible at all times on your person. Badge holders DO NOT need a working credential in addition to the badge. Working credentials are solely for individuals supporting the stations during the time of the event.

CULINARY VILLAGE AND OFF-SITE PREP KITCHENS

We have two prep kitchens available throughout the festival. Locations + schedules for each are below. If you are a Visiting Talent, you will have the opportunity to schedule time in our prep kitchen spaces via your forms. There will be experienced Culinary Support in the prep kitchens if you need assistance preparing for your event(s). We are glad to transport your food from our prep kitchen to off-site events. A schedule will be posted here and in the prep kitchen.

CULINARY LOGISTICS

 

SERVICEWARE

Charleston Wine + Food will provide all disposables, utensils, napkins, prep, and serving tables. Our Culinary Logistics Team will choose a disposable we think is best suited for your dish based on what we can source due to the global supply chain issues.

 

FOOD PRODUCT FOR MENU ITEMS

All food product will be ordered by our Culinary Logistics team based on your completed form(s). Charleston Wine + Food will not reimburse chefs for food purchased without prior approval by the Culinary Logistics team.

Local Chefs:

We ask you to please prep in your restaurant kitchen. Your requested food product will be available for pick up at the main prep kitchen in the Culinary Village under your name. You will be able to provide your preferred pick-up date and time via your form.

 

Visiting Chefs:

If you have scheduled time in the prep kitchen, your product will be available when you arrive under your name. We will also have pantry basics available should you need a little of this or a little of that for your dish. You can find that pantry list below!

Culinary Form

CULINARY FORMS ARE NOW CLOSED AS THE FESTIVAL IS IN FULL SWING. SHOULD YOU HAVE ANY CULINARY NEEDS, MAKE SURE YOU TELL THE CULINARY LOGISTICS TEAM AT THE PREP KITCHEN WHAT YOU WILL NEED SO THEY CAN ENSURE IT MAKES IT ON SITE.


IF YOU ARE PARTICIPATING IN THE CULINARY VILLAGE, COME TO THE PREP KITCHEN AND LET THE CULINARY TEAM KNOW WHAT YOU NEED.


BEVERAGE LOGISTICS

GLASSWARE

Charleston Wine + Food will provide all glassware or plastic cups for your event. Cocktails at the Signature Events will be poured into 9 ounce plastic cups, Beverage Workshops & Bar Takeovers will use the venue hosts glassware. There is no need for you to provide any glassware. We can communicate the glassware available on a venue by venue basis.

 

BEVERAGE PRODUCT

You will be asked to provide your requested beverage product(s) (spirit, wine, aperitif, etc)  you would like to create your cocktail via your beverage form. If we are unable to source any of the product(s) you have requested, we will ensure you have a product that is comparable to your original request. If you would like to source and procure product directly, Charleston Wine + Food is not able to reimburse you for the product.

When you submit your recipe, please provide it as you would make a single cocktail, not a batch. Our Beverage Team will transfer the recipe into our batching calculator. Please remember that if your cocktail would typically be shaken, it will be necessary to add 10-15% water to dilute the batch to compensate for normal ice dilution. All cocktails at the Signature Events will be batched in and served from large drink dispensers.

 

INGREDIENTS FOR COCKTAILS

All ingredients will be ordered by our Culinary Logistics team based on your completed form(s). Charleston Wine + Food will not reimburse you for ingredients without prior approval by the Culinary Logistics team. BATCHING

All cocktails will be made the day before each event at the Batching Kitchen in the Culinary Village. We have an expert team available to batch your cocktails, or you can request a time to come batch it yourself.

The kitchen will have prep tables, knives, cutting boards, a home blender, home food processor, and a portable stove.

If your cocktail requires that you turn raw food items into liquid, we ask that you do that yourself. For example, if you need a pineapple-chili simple syrup, please plan on making the syrup at your bar’s kitchen or set up a time to make that ingredient in our batching kitchen.

Our kitchen WILL NOT have a commercial juicer. If you want to make your own juice you’ll need to do that at your bar’s kitchen. We are able to provide you with juice from Twisted Alchemy.

We will have staff available to prep garnishes as requested.

Local Beverage Talent: We ask you to please batch your cocktails in your bar. Your requested ingredients will be available for pick up at the main prep kitchen in the Culinary Village under your name. You will be able to provide your preferred pick-up date and time via your form.

Visiting Beverage Talent: If you have scheduled time in the prep kitchen, your ingredients will be available when you arrive under your name. We will also have beverage pantry basics available should you need a little of this or a little of that for your cocktail.

 

SUPPLIES

Aside from cups and ice, please let us know if you will need any barware or other supplies for your service table. Ice bucket, ice scoops, bar mats, etc. Please do not bring any branded barware unless it’s from the brand you are pouring. We will also need to know if you need power at your table.
