Brett is a 14-year veteran in the culinary world and was instrumental in the development of Coastal Provisions, from menu design to recruiting an exceptional team, creating a restaurant that rivals those of downtown Charleston.

Prior to Wild Dunes Resort, Brett was Executive Chef at Luminaria Restaurant & Patio, one of our sister properties at The Inn and Spa at Loretto. Sparman started his career as a Sous Chef at Sapristi Wine Bar in the Dallas/Fort Worth area. From there he went on to work in a variety of the most respected restaurants in Texas, including serving as Executive Chef at the Foundation Room in Houston, Executive Sous Chef at Nana Kitchen in Dallas, which is listed in Gourmet Magazine as one of the “Top 50 Restaurants in North America.” Brett also worked alongside famed Chef Nobu Matsuhisa while in Texas.
