Matt graduated from the College of Charleston in 2009. After college he began working in Lowcountry Local First’s “Growing New Farmers” Pilot program. Over the course of 8 months he apprenticed under Maria Baldwin of Thornhill Farms and Sidi Limehouse of Rosebank Farms. During his apprenticeship he had the idea to start a gourmet ice cream company using produce from local farmers. The result would be a seasonal ice cream whose flavors every week would attempt to capture a moment in time in the Lowcountry’s revolving seasons. Operating since April, Matt founded Roots Ice Cream that could be found at local farmer’s markets. Currently, Matt still works at Thornhill Farms and plans to continue working there and hoping to move towards growing all of the ingredients for the flavors of his ice cream.
