Restaurant:Clammer Dave‘s Sustainable Gourmet

While people around town know him as “Clammer Dave”, David Belanger, degreed in Agriculture, has a lifetime of involvement in food production and processing.  From livestock ranching and cropping to agri-business consulting, he evolved into shellfish farming twelve years ago and raises his bounty on twenty-five acres of intertidal lands along one of Charleston’s barrier islands.

Dave’s signature “Cultured Clams” and “Capers Blades” oysters are often described by Chefs and foodies alike as world class shellfish, owing to the innovative and sustainable processes to which his products are treated.   Shipping direct to customers across the country, Clammer Dave’s clientele include some of the industries most noted Chefs, restaurants, resorts and food festivals.

Having recently acquired a food processing plant, 2012 will bring about an increase in services to the specialty and gourmet food markets. With his network of like-minded fisherman and producers, customers will see a variety of additional products adhering to the strict environmental and quality standards on which his business was founded.
