Michael Bourie is the owner of Oysters XO Charleston.

Growing up on the north shore of Massachusetts, Michael developed a deep passion for the ocean. Never far from the salty air and fresh seafood, Michael trained as an Oyster Chef in 2014 while attending university in the nation’s capital.

The concept of the roaming Oyster Chefs started over 7 years ago in Amsterdam as a new culinary experience that is unique and unexpected. Dutchman and art dealer, Rifko Meier, introduced the concept to New York and founded Oysters XO in 2013.

Michael focuses on providing an exquisite experience for each guest. Whether shucking someone’s first oyster or for an oyster lover, Michael and his team mingle and interact with guests offering history, flavor profiles, and pairings while shucking and serving fresh, premium oysters.

Michael’s love of food and desire to more deeply understand the connection of cuisine and culture have taken him around the world. Always keeping oysters within shucking reach, Michael brought Oysters XO to the Lowcountry in 2017 to make Charleston fall in love with the Oyster Chefs.

Michael aims to teach America how to shuck and share his love of this ocean delicacy.
